Enzymes are very important for the life on earth, did you know that?
Human, animal and vegetal life depends on these “little biological Pac-Man” more than you think, but why are they so much important?
Because they “chew” the flour’s molecules before you do!
What does it mean?
All the flours you can find in stores are called “conventional” flours. Without entering into the technical details, these are mixes of white super-refined flours that have no more “life” inside and contain basically nothing but sugar.
The grain contains a huge amount of life forms: above the bran, which is the skin, and below, in the seed, there are hosted many good bacteria, enzymes, vitamins that are very healthy for the human body. All these hosts let, among the other things, the slow-kneading to happen the way we use to know it.
We use a mix of øko flours to make our pizza, but that’s not the key point. Our flours are not only organic but “alive” as well, it means that they have been produced specifically to preserve all the good elements mentioned before, in the most natural way possible.
Of course, working with such multitude of forms of life it’s not easy: it’s like handling a crowd of excited Minions!
Nonetheless, thank to these elements our dough have that special taste, and smell, and effect on your senses. It’s exactly because of the slow action of our little Pac-Man that creates a mix of new substances into the impast.
